*This works best in a Bosch mixer*
Put in the Bosch bowl – 5 cups hot water and 7 cups flour. Mix well. Add
- 2/3 cup sugar
- 2/3 cup oil
- 2 T salt (I usually cut this to about 1 ½ T).
Mix well. Add
- 2 ½ T SAF instant yeast and 1 C flour
Mix lightly. Let sit for 5 minutes.
Set the mixing speed at 1. Add flour 1 cup at a time until the dough “cleans the sides” of the bowl. (Usually takes between 4 & 5 cups, but sometimes as much as 6-8 depending on the humidity that day). The dough should be smooth and not sticky. When the flour is all incorporated, set the mixing speed at 2. Mix for 10 minutes. Watch your Bosch, mine tends to gravitate towards the edge of the counter!
Dump the dough into a large Tupperware bowl sprayed with Pam. Cover with 2 towels. Rise till double. Punch down. Rise till double again. Dump out onto a floured surface. Divide into 5 pieces. Shape each piece into a loaf-put in loaf pans sprayed with Pam (you can also grease them with shortening if you’d rather.) Cover with towels. Let rise till double. Pre-heat oven to 400 degrees. Put the bread in, turn the heat to 325 degrees, bake for 25-40 minutes. This depends on the humidity, your oven, and how brown you like your crust. Remove immediately to wire racks to cool.
