1 C. White sugar
1 C. Brown sugar
1 C. salad oil
3 eggs
1 T. vanilla
2 C. grated zucchini (peeled)
3 C flour
1 T. cinnamon
1 tsp soda
1/4 tsp baking powder
1 tsp salt
1/2 - 1 cut nuts (optional)
1. Separate eggs and beat the whites with 1/2 of the sugar until firm
2. Beat the yolks until thick, add sugars, then add oil, vanilla, then zucchini and fold in the egg white mixture.
3. Separate flour and add 1/2 to soda and baking powder - save this until later (No. 5)
4. Put the rest of the flour, plus cinnamon and salt, into the mixture.
5. Fold in the balance of flour mixture.
6. Blend together then add nuts (or how about chocolate chips?)
7. Cook in bundt pan at 325 degrees for 50 minutes to an hour. (use 2 bread pans if you don't have a bundt pan.)
Top with cream cheese frosting
