3/4 cup shortening
1 cup sugar
1 egg well beaten
4 Tbsp molasses (1/3 cup)
2 tsp soda
2 cups flour
1/2 tsp salt
1 Tbsp ginger
1 tsp cinnamon
1/4 tsp nutmeg
white chocolate/almond bark
Cream together shortening and sugar and beat in egg and molasses. Sift together dry ingredients and fold them into shortening mix.
Take small portions of dough (about walnut size) and form into balls, roll in sugar, and place on ungreased cookie sheet at 350 degrees F for about 8-10 minutes or until done. Cool.
Melt chocolate and dip half of each cookie in. Place on wax paper to harden.
*Recipe said it made about 60 cookies, but I only made about 36. I guess my dough balls were bigger. I also ended up cooking the cookies for closer to 12-14 minutes. Delish!
