Chicken Tetrazzini (or Turkey)

  • 8 ounces spaghetti, broken in pieces
  • 4 T butter or margarine
  • 5 T flour
  • 1 cups chicken broth
  • 1 cup light cream
  • 1 tsp. Salt
  • Pepper
  • 1 cup fresh or canned mushrooms, including juice
  • 2 cups cooked chicken (around 4 breasts)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated cheddar cheese

Cook spaghetti until tender. Melt butter; blend in flour. Stir broth into flour mixture. Add cream. Cook until mixture thickens and bubbles. Add salt and pepper, spaghetti, mushrooms, and chicken (I add dried minced onions too). Pour into casserole dish and sprinkle with cheeses. Bake at 350 degrees for about 30 minutes.
