Chocolate Zucchini Cake

  • 1/2 cup margarine
  • 1/2 cup vegetable oil
  • 1-3/4 cup sugar
  • 2 eggs
  • 1 tsp. Vanilla
  • 1/2 c sour milk*
  • 2-1/2 cups flour
  • 4 T. cocoa
  • 1 tsp. Soda
  • 1/2 tsp. Baking powder
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Salt
  • 2 cups peeled and grated zucchini

Topping:

  • 1/4 cup chocolate chips
  • 1/4 cup brown sugar
  • 1/4 cup chopped nuts

Cream shortening and sugar. Add eggs and vanilla. Beat. Add dry ingredients alternately with sour milk. Mix in zucchini. Spread in 9 x 13 pan and top with topping. Bake at 325 degrees for 40 – 45 minutes.

*(to get sour milk, add around 1 T. vinegar to the 1/2 cup milk).
