Hamburger Minestrone

  • ½ Cup small uncooked pasta shells
  • 1 lb ground beef
  • ½ Cup chopped onion
  • 3 Cans (14 ½ oz each) beef broth
  • 1 pkg. (16 oz) frozen mixed vegetables
  • 1 Can (16 oz) Kidney beans, drained and rinsed
  • 1 can (14 ½ oz) diced tomatoes – with juice
  • 1 can (6 oz) tomato paste
  • 3 tsp Italian Seasoning
  • 1 tsp salt
  • ¼ tsp dried thyme
  • ¼ tsp dried basil
  • ¼ tsp pepper

Cook pasta according to package directions. While cooking, in a soup kettle or large saucepan, cook beef and onion over medium heat until beef is no longer pink. Drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat. Simmer, uncovered, for 15 minutes. Drain pasta and add to the pan. Cook 5 minutes or until heated through.
