Lemon Chicken - Helen Goo

Marinade:
  • 4 boneless/skinless chicken breasts
  • 2 Tbsp soy sauce
  • 2 Tbsp garlic, chopped
  • 1 tsp sugar
  • Pinch of salt

Batter:

  • 2 eggs, beaten
  • 1/3 cup cornstarch
  • 1/2 tsp baking powder
  • Salt & pepper

Sauce:

  • 2 lemons, juiced
  • 1 tsp garlic, chopped
  • Water, equivalent to amount of lemon juice
  • 1/3 cup sugar
  • Pinch of salt
  • 2 Tbsp cornstarch mixed with 1/3 cup water
  • 1 Tbsp oil

Mix all ingredients for marinade. Marinate chicken for 30 minutes. In a mixing bowl, mix well all the batter ingredients. Heat up the oil for deep frying. If not using a deep fryer, use 2 inches of oil in a frying pan. Take the marinated chicken and dip into batter making sure to get a nice coat of batter on the chicken. Deep fry until lightly browned and chicken is done. Remove chicken onto paper towels to cool. Sauce: In a sauce pan, put 1 Tbsp of oil and add garlic to saute. Add lemon juice, water, sugar, and salt. Mix well. Add cornstarch mixture and stir frequently until sauce thickens. Cut chicken in to nice slices and arrange on platter. Pour sauce over chicken and serve.
