Swedish Pancakes - Crepes (From Mark's Mom)

  • 2 1/2 C. Flour
  • 1/4 C. Sugar
  • 1 tsp Salt
  • 6 Eggs
  • 4 C. Milk
  • 1/2 C. Butter (or oil)
Mix all above. Warm up a pan on medium high heat (on my stove I turn the nob to 7). You can do it on a skillet too, but it's harder to keep them round. Pour the batter so it's making a pretty thin pancake. Cook for about 1 minute on one side, or until the top isn't runny. Then flip it and cook on the other side for about 30 seconds. Mark loves to eat them plain, but they are very delicious with fruit and whipped cream. Obviously this makes a lot, so if it's just Mark and me, I half the recipe.
