Cream Cheese Stuffed Chicken

4 chicken breasts
4 oz cream cheese at room temp
1 tsp chopped chives
8 slices of bacon

Preheat oven to 400.  Combine cream cheese and chives.  Cut a slit in each chicken breast.  It works best if you can cut the slits deeply, but leave the opening smaller (so less cream cheese oozes out while baking).  Stuff each breast with cream cheese mixture, and then wrap each breast in two slices of bacon.  Bake for 25-30 minutes.  Seriously this was fabulous, and I was hard pressed not to lick the pan after the chicken was gone!
