MIXED BERRIES CRISP

Ingredients-topping:
1/2 Cup flour
3/4 Cup brown sugar
1/2 tsp cinnamon
1/4 tsp salt
1/2 Cup cold butter (cubed into small pieces)
1 Cup old-fashioned rolled oats

Filling:
5 Cups mixed berries, frozen or fresh
1/3 Cup sugar
1/2 tsp almond extract
1/4 Cup flour

Preheat oven to 350 degrees.  Spray a 9" pie plate with Pam.

Make topping first.  In large mixing bowl, whisk together the flour, brown sugar, cinnamon, and salt.  Add in the cold pieces of butter and cut into the mixture with a pastry cutter (or two forks) until you have small pea sized crumbs.  Stir in the rolled oats and set aside.

Make the filling next.  In a separate large mixing bowl, add the berries, sugar, extract, and flour and mix until all the berries are well coated.  Pour the mixture into the prepared pie plate and spread it around into one even layer.  Sprinkle the topping evenly over the fruit.

Bake at 350 for 40 - 45 minutes or until the filling is bubbly and the topping is lightly golden brown.  Remove from oven and cool slightly before serving (with vanilla ice cream).

Note:  I made this with left over berries from Sunday dinner because they were a little too soft to just eat.  I don't even know if I had 5 cups.  I added the almond extract to this and I think next time I might add an entire teaspoon of it.  It was delish and a great way to use up those day old berries!!
