Spinach Almond Salad

Spinach
Slivered almonds
1/4 cup sugar
Strawberries, sliced or quartered
Mushrooms, sliced
Craisins
Grated Mozzarella cheese 

First, sugar the almonds by placing the sugar and almonds into a small frying pan.  On medium heat stir constantly until the almonds brown slightly and the sugar crystallizes onto the almonds.  Mix all ingredients.  Serve with a raspberry vinaigrette, or Aunt Rauna's Poppy Seed dressing (which is also on this blog)

You can add or substitute many ingredients in this salad such as:  sliced apples, sliced pears, boiled eggs, crumbled bacon or use your own imagination.
