4 Chicken breasts
1/2 Cup of panko bread crumbs
1/2 cup of shredded Monterey Jack cheese
1 T Ranch seasoning
4 tsp mayo
2 T butter
Kosher salt
pepper
Adjust rack to top position and preheat oven to 425 degrees. Place butter in a small microwave safe bowl; microwave until melted. Stir in panko, cheese, ranch seasoning, salt and pepper to taste.
Season chicken all over with salt and pepper, then place in a baking dish and spread tops of chicken with 1 tsp of mayo each. Mound each chicken with panko mixture, pressing firmly to adhere, just on the tops. Roast until chicken is cooked through about 15-18 minutes.
