Spinach Almond Salad

Spinach
Slivered almonds
1/4 cup sugar
Strawberries, sliced or quartered
Mushrooms, sliced
Craisins
Grated Mozzarella cheese

First, sugar the almonds by placing the sugar and almonds into a small frying pan.  On medium heat stir constantly until the almonds brown slightly and the sugar crystallizes onto the almonds.  Mix all ingredients.  Serve with a raspberry vinaigrette, or Aunt Rauna's Poppy Seed dressing (which is also on this blog)

You can add or substitute many ingredients in this salad such as:  sliced apples, sliced pears, boiled eggs, crumbled bacon or use your own imagination.

Aunt Rauna 's Poppy Seed Dressing

1-1/2 C olive oil
1-1/2 C red wine vinegar
1 C sugar
2 tsp salt
1 tsp dry mustard
1 tsp poppy seeds
grated purple onion (or substitute 2 tsp onion powder)

Mix well and use on our favorite spinach salad. This makes a lot.  I half the recipe and it's still plenty.

Honey Lime Fruit Salad

Choose several or all fruits from the following options:

Pineapple
Blueberries
Strawberries
Red grapes
Mango
Kiwi
Mandarins (from a can)

Cut up the pineapple, strawberries, mango and Kiwi.  Put in large bowl with the other fruits.

Dressing:
Lime zest (around a tsp)
Fresh lime juice. (1/3 to 1/2 Cup, or whatever you need)
Honey (squirt honey in bowl until you think it's sweet enough-2 Tbls maybe.)

Toss together.  It is the prettiest salad ever and tastes great too.  Sorry for the vague amounts--I just winged it.
