House Seasoning, recipe follows
All-purpose flour
2 tablespoons olive oil
2 tablespoons butter
1 medium onion, sliced (I only had minced onions and just shook a few in)

1 cup sour cream
Cooked egg noodles
House Seasoning:

1/4 cup garlic powder
  1. Sprinkle the steak strips with House Seasoning, and then dust with flour (I JUST PUT MY BEEF IN THE MELTED OLIVE OIL/BUTTER AND THEN SEASONED WITH GARLIC POWDER/SALT/PEPPER). In a large skillet, quickly brown them on both sides in the olive oil and butter. Remove the steak from the pan. Add the onion slices and mushrooms to the pan drippings. Saute for a few minutes, until the onion is tender. Sprinkle with 1 teaspoon flour. Put the steak back into the pan with the onion and mushrooms. Add the mushroom soup and beef broth. Cook over low heat for about 30 minutes, covered. Adjust seasoning to taste, adding salt and pepper, as needed. Stir in the sour cream the last few minutes, right before you serve. Serve over cooked noodles. OR YUMMY OVER LEFTOVER MASHED POTATOES!

Crockpot Macaroni and Cheese

This is the recipe that I made for Max's birthday party many years ago.  It tastes best when made in the crockpot, but I usually just combine these ingredients on the stove for my kids for a quick lunch.

2 C macaroni
2 tsp olive oil (I don't use this for the stovetop version)
1 C evaporated milk
1/2 cup milk
1/2 tsp salt
1/4 tsp pepper
2 C shredded cheddar cheese
4 T butter melted (I don't usually put this in)

Cook the macaroni following package directions. Drain and rinse with hot water.  Generously butter the sides and bottom of crock pot.  Combine the macaroni with the remaining ingredients in the crock pot and blend well. Cover the slow cooker and cook on low for 2.5 to 3.5 hours, stirring a few times.  If you want too, you can put it in a baking dish and top with a little more cheese, and put it under the broiler for a minute or two until the cheese it melted.  Or just serve it from the crock pot.

Cheddar Bacon Ranch Chicken Pasta

1 pound pasta (penne)
6 strips of bacon, diced
1 tablespoon butter
2 boneless skinless chicken breast halves, cut into bite-sized pieces**
2 tablespoons all-purpose flour
1 packet ranch dressing mix
2 cups milk
1 cup shredded cheddar cheese
Salt and pepper to taste

1. Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm.

2. Meanwhile, cook bacon in a large skillet over medium heat until crisp.  Drain on paper towels. Drain all but one tablespoon of bacon drippings from the pan.

3. Season the chicken with salt and pepper. Add the butter to the bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.

4. Sprinkle the flour and ranch dressing mix over the chicken stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the bacon pieces; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed.

5. Add the cheese sauce to the reserved pasta and stir to combine. Serve each plate of pasta with more bacon sprinkled over the top.

**I just used one can of chicken breasts from Sam's club.  It was much easier and still really good.  This is definitely not a healthy recipe, but tastes good.
