Grease bottom of the pan. Cover roast in lots of salt & pepper. Pour ¾ C of water in pan. Cover with lid or foil. Place on 2nd to bottom rack & bake at 325 for 2 ½ hours.
Gravy
Skim grease. Put approximately 3 C. hot water in bottom of pan. Stir & scrape everything off. Put ½ C flour & ¾ C cold water in a jar & shake until mixed. Bring drippings to boil, turn to medium heat, & make sure it’s not too hot. Pour & stir flour water mix in. Add salt & pepper to taste.
